LACTALIS BUTTER

In the UK, Lactalis operates in the butter market with its brand President®.

TYPES OF BUTTER

There are two main types of butter: sweet cream or lactic butter.

Most butters found in the UK are sweet cream butters. Cream is delicately churned to create a sweet and balanced butter. Lactic butter is made from cream to which lactic cultures are added, to create a more creamy, fuller flavoured product. We also produce a dairy spread, Président® Spreadable which is one of the only spreads on supermarket shelves that is 100% dairy (no vegetable oil added).

President® Butter is available in Unsalted, Slightly Salted and with Sea Salt Crystals.

HOW BUTTER IS MADE

1Butter, one of the oldest and most natural foods in the world, has been a delicious part of the human diet for thousands of years. Made with 100% natural ingredients, it takes 10.2L of fresh wholesome cow’s milk to make 454g (1lb) of butter.

2Fresh milk from dairy farms is collected and brought to the creamery. The cream is then separated from the fresh whole milk using centrifugal force. It is then pasteurised by heating it rapidly to a high temperature to eliminate bacteria and help the butter stay fresh longer.

3Once pasteurised, the cream is beaten vigorously in a churning cylinder until it thickens naturally into butter. The remaining liquid (buttermilk) is drained off, and the butter is mixed and blended. At this point, salt is sometimes added.

The final product is, by regulation at least 80% fat, about 16% water and 3% milk solids. After being weighed, cut, wrapped and chilled, the butter is delivered to your grocery store, ready for you to add to your favourite foods.
