INGREDIENTS
Serves 1
2 slices of wholemeal seeded bread (thick sliced)
80g selection of roasted vegetables (carrots, peppers, onions)
2 slices Leerdammer Light cheese
Low fat spread (20g)
HOW TO MAKE THIS
- Heat up the sandwich toaster/ panini maker
- Lightly spread the bread on one side with the low fat spread
- Once the toaster is hot, add a ‘spread down’ slice of bread to the toaster then pile on the roasted veg and slices of Leerdammer
- Add the top slice (‘spread up’), close the lid and cook until bubbling hot

2 tablespoons tomato purée
100g cherry tomatoes halved

HOW TO MAKE THIS
- Spread the tomato purée onto each slice of baguette
- Pile on the halved cherry tomatoes
- Add the Leerdammer slices on top
- Season to taste, then grill until the toppings are melted
