INGREDIENTS
Serves 1

2 slices of wholemeal seeded bread (thick sliced)

80g selection of roasted vegetables (carrots, peppers, onions)

2 slices Leerdammer Light cheese

Low fat spread (20g)

HOW TO MAKE THIS
  1. Heat up the sandwich toaster/ panini maker
  2. Lightly spread the bread on one side with the low fat spread
  3. Once the toaster is hot, add a ‘spread down’ slice of bread to the toaster then pile on the roasted veg and slices of Leerdammer
  4. Add the top slice (‘spread up’), close the lid and cook until bubbling hot

INGREDIENTS
Serves 1

¼ baguette, sliced in half longways

2 tablespoons tomato purée

100g cherry tomatoes halved

2 slices Leerdammer Light cheese

HOW TO MAKE THIS
  1. Spread the tomato purée onto each slice of baguette
  2. Pile on the halved cherry tomatoes
  3. Add the Leerdammer slices on top
  4. Season to taste, then grill until the toppings are melted
